Smoked Chicken Lollipops

The mouthwatering Smoked Chicken Lollipops are an absolute crowd-pleaser! These appetizers are not just easy to make but also pack a punch of flavor that everyone will love. Perfect for any gathering or party, they're sure to be a hit. To start, you'll need four pounds of chicken drumettes, skin-on. The first step involves transforming these drumettes into a lollipop shape. Using a sharp paring knife, carefully cut around the bone at the end of each drumette. Saw through the meat and skin until you reach the bone. Once done, firmly grip the drumette and pull the meat upward toward the thicker part of the drumette. This will flip the meat inside out, creating that fun lollipop look. Be sure to scrape off any leftover skin from the bone and discard it before repeating the process with all the drumettes. Next up, we’re making a marinade and sauce that will give these lollipops their signature sweet and spicy kick. Combine ¾ cup of gochujang, six chopped garlic cloves, ½ cup of soy sauce, ⅔ cup of granulated sugar, ¼ cup of rice wine vinegar, two tablespoons of fresh lemon juice, half a cup of water, one teaspoon of toasted sesame oil, and a chopped one-inch piece of fresh ginger in a blender or food processor. Blend everything together until it forms a smooth consistency. Set aside half of this mixture for later use. Now it's time to marinate the chicken. Place the chicken in a large bowl and coat it generously with the remaining marinade. Let it sit for at least two hours to absorb all those delicious flavors. While the chicken is marinating, preheat your Z Grills wood pellet grill to 225 degrees Fahrenheit. If you have Z Grills cherry wood pellets, even better! Once the grill is ready, place the chicken lollipops on the grates and smoke them for 2 to 2 ½ hours or until the internal temperature reaches at least 160 degrees Fahrenheit. While the lollipops are smoking, prepare the reserved sauce by heating it in a saucepan over low heat. Allow it to simmer for about 10 minutes until it thickens slightly. For a smoother texture, you can strain the sauce through a fine mesh sieve. After smoking, brush the lollipops lightly with the prepared sauce and crank up the grill temperature to 375 degrees Fahrenheit. Cover the grill and continue cooking for another 10 minutes or until the internal temperature reaches 165 degrees Fahrenheit. Finally, plate the smoked chicken lollipops and garnish them with sesame seeds and thinly sliced green onions. Serve any leftover sauce on the side for extra dipping pleasure. These Smoked Chicken Lollipops are not only a visual treat but also a delightful experience for your taste buds. They're perfect for any occasion and can be easily customized to suit different preferences. Whether you're hosting a casual get-together or a formal event, these lollipops are sure to impress. And if you can't find gochujang, don't worry—any chili paste will do the trick. Enjoy!
